The recipe yields 10 portions, each 45 cal. Usually one codfish cake has between 80-90 cal each, cos they are usually deep fried and contain more flour. So this whole batch traditionally contains about 700cal, but the one I did is about 425cal 😉
Ingredients:
125G Cooked Potato
100G Cooked Cod Fish
50G Yellow Chopped Onion
5G Green Onions
15G Chopped Parsley
1/4 cup Egg Whites
2 Tsp Olive Oil
20G All-Purpose Flour
1/2 tsp baking soda
1/2 tsp baking powder
Condiments: Salt, Pepper, Garlic, Onion, Turmeric, Cumin & Allspice
1. Boil the Potato and Cod Fish
2. Brown the onion with 1 tsp of oil (dash of salt and dash of sweetener - TRUST ME ON THIS ONE👀)
3. Mash the potatoes. Break the codfish in tiny pieces.
4. In a bowl, pour egg whites, parsley, potatoes, codfish, onions, green onions, flour, baking soda and powder, and condiments. Grease your hands with olive oil (little) and with your hands mix it all.
Make small egg shaped balls, and pour into a tray. Spray olive oil just a second. Bake at 375F 15 minutes.
